My Favourite Dal - Comfort Food (Vegan Recipe)

I posted a photo of this Dal last week and was asked to put the recipe on so here it is, delicious, simple, versatile and most of the ingredients are great store cupboard staples.

Makes enough for about 6 people as it's pretty filling.


Ingredients
1 onion, finely chopped
1 tbsp vegetable oil/ coconut oil
3 cloves garlic, grated
2 inches ginger, grated
2 birds eye chillies, finely chopped if you like it hot or for a milder heat pierce each chilli with a knife and keep whole. Take out when serving.
75g chana dal, rinsed in cold water and drained 
50g red lentils, rinsed in cold water and drained
750ml vegetable stock or water
400g tin tomatoes
1 tbsp Bite Me Spices Garam Masala
1 tsp tumeric
Salt
Chopped fresh coriander leaves.

 

Method

  • Add oil to a large saucepan, heat and add the chopped onion. Cook for a few minutes until translucent and add the grated garlic and ginger. Stir well and let cook for another minute.
  • Add the chillies and the washed lentils, stir and add the garam masaila and tumeric. Stir well. Add the tomatoes and the stock or water. Bring to a simmer, put on a lid and let it cook gently for 20 minutes. Check the lentils are softened. Add salt to taste, a sprinkle more of Bite Me Spices Garam Masala and the chopped coriander finish the dish. 
  • Serve with rice, chapatis or have this as a selection of smaller dishes.
