Butternut Squash & Sweet Potato Tostadas (Vegetarian)
Aside from the explosion of flavours in one bite from this dish the second best thing is it can all be done in advance and reheated and assembled when required. No stress cooking is the goal here.
So without further ado. Here's the ingredients list and the recipe steps. Adapt as you wish, use vegan cheese if you want to, the choice is yours, this is a guide as to how I made ours.
Ingredients
- 1/2 medium butternut squash, seeds removed and the flesh cut into 2cm-ish cubes.
- 1 sweet potato, peeled and cut into similar sized cubes
- 2 tbsp Bite Me Spices Mild Chilli Powder (use can also use Hot or our Fajita Mix if you have them)

My Favourite Dal - Comfort Food (Vegan Recipe)
I posted a photo of this Dal last week and was asked to put the recipe on so here it is, delicious, simple, versatile and most of the ingredients are great store cupboard staples.
Try it and send in the pics to the facebook page or put a review on here. We use our Garam Masala and spices in this recipe, find them in the spice shop.
Makes enough for about 6 people as it's pretty filling. -
NEW! Gluten Free Sage & Onion Stuffing Mix
A roast dinner isn't quite right without stuffing so I've been working on this for a while to get a great flavour and a pleasing texture. Gluten free breadcrumbs are okay but the ingredients lists are pretty scary so these contain none of the usual artificial additives. -
Vegan Albondigas (Mexican 'Meatless' Meatballs)
Like many other people here at Bite Me HQ we're trying to eat more plant-based meals but I am incredibly fussy so I have found many meat replacements unsatisfying in terms of taste, texture or both. I have however finally found a plant-based mince that makes great 'meatballs' so we've adapted our Albondigas recipe for a vegan meal that the whole family can enjoy. -

The 'Not Fried Chicken-But Halloumi' Recipe
Okay a bit of a mouthful as names go but it's a damn tasty mouthful too!
It uses our gluten free Fried Chicken Mix that despite it's name is completely suitable for vegetarians and vegans so you too can have a go at doing 'Fried whatever you like'. We've had great results with some things, not others but there are tips to follow;

Rice and Peas
Here's a fabulous accompaniment to both our Jamaican Goat Curry or the recipe for the Chicken Curry that I have posted today. It's not 'my' recipe as such as I've been making this for a while but the method works for me and as you can see from the image, makes fluffy, tasty and well separated rice... unless you forget it! -
